What tempeh to use

Personally, I love the tempeh from Trader Joe’s. It has minimal ingredients, is reasonably priced, and also crumbles really nicely/easily. Bonus, it also stays good for a long time in your fridge!

How to make this Vegan + Vegetarian Spaghetti Sauce

  1. Saute onions – in olive oil over medium heat in a saute pan until clear, ~2-3 minutes.
  2. Add crumbled tempeh – and continue to cook until all pieces are browned, ~5-6 minutes.
  3. Add mushrooms and green pepper – cook until mushrooms are no longer ‘pink,’ ~3-5 minutes.
  4. Remaining ingredients – get added to pan. Bring to a low boil and then simmer uncovered on low for 20 minutes to allow flavors to combine and sauce to thicken. Stir occasionally to make sure sauce doesn’t burn/stick to bottom.
  5. Prepare your base – for this recipe, I used zucchini noodles, but you could also serve over roasted potatoes, or your favorite brand of regular or gluten free pasta.
  6. Serve – once sauce is ready, serve over base of choice. Optional, top with fresh basil and your choice of cheese!

This vegetarian spaghetti sauce is an easy weeknight dinner that will be a crowd pleaser for everyone. Made-from-scratch with minimal ingredients, easy to customize, and takes less than 40 minutes start to finish. Let's get cooking!

Ingredients

Tempeh Spaghetti Sauce

  • ¼ cup olive oil
  • 1 ea medium onion, diced ~ 1 cup
  • 1 8oz pack tempeh crumbled
  • 2 ea green pepper, diced ~ 2 cups
  • 1 8oz package mushrooms, diced ~ 2 cups
  • 2 14.5oz cans diced tomatoes
  • ½ 6oz can tomato paste
  • ½ cup red wine
  • 2 tsp oregano leaves
  • 1 tsp salt
  • Fresh basil - optional garnish

Zoodles

  • 4 zucchini
  • ½ cup olive oil divided
  • salt & pepper to taste

Instructions

Tempeh Spaghetti Sauce

  • To a medium saute pan, add olive oil and heat to medium low.

  • Saute onions in olive oil until onions are clear (2-3 minutes).

  • Add tempeh and saute until all tempeh is browned (5-6 minutes). Add mushrooms and green pepper and saute until mushrooms are no longer “pink” (3-5 minutes).

  • Add the two cans of diced tomatoes, tomato paste, red wine, oregano and salt.

  • Bring to a low boil then simmer uncovered on low for 20 minutes. Stir occasionally to ensure nothing burns.

Zucchini Noodles

  • While sauce is cooking, start preparing your ‘Zoodles’ (zucchini noodles). Using a spiralizer, spiralize the 4 zucchini into ribbons.

  • To a medium saute pan, add 2 tbsp olive oil and about ¼ - ⅓ of the zucchini ribbons (depending on the size of your pan). Saute for 3 -5 minutes over medium heat, until al dente or desired consistency is reached. Season with salt & pepper to taste.

  • Set aside cooked zoodles and repeat the process in batches with remaining zucchini noodles.

  • To serve, split zucchini noodles between 4 bowls. Top with tempeh spaghetti sauce and garnish with fresh chopped basil (optional). Enjoy!

FAQs

Why is my spaghetti sauce watery? ›

This could happen when you add too much pasta water into your sauce, and you accidentally drown the thick sauce with the starchy water (happens to the best of us). I find that this happens to me most often when I'm making quick sauces, like a meat sauce or light marinara that hasn't had the time to simmer.

How do you thicken spaghetti sauce without tomato paste? ›

Cornstarch: Make a slurry of half water, half cornstarch and whisk until smooth. Cornstarch is a powerful thickener, so start by whisking in no more than 1 tablespoon of the mixture per 2 cups of simmering sauce; stir and simmer for 2 minutes, check the thickness, and repeat with more slurry as needed.

How do you reduce pasta sauce? ›

Reducing a sauce is as simple as cooking it over a medium heat until the volume has reduced and the sauce is at the consistency you want. This is a great method for pasta sauces and pan sauces but should be avoided for sauces containing soy sauce or lots of salt as the flavour will become too salty.

How do you get the tomato taste out of spaghetti sauce? ›

When your sauce begins to simmer, add the salt and a pinch of white or brown sugar, then mix; the sugar will be able to counterbalance and eliminate the sourness of the tomato, without changing its flavor or sweetening your dish.

What can I add to spaghetti sauce to make it taste better? ›

Tossing in strips of basil, a sprig of thyme or some oregano can take your sauce to the next level. Although fresh herbs might pop a bit more, dried herbs and spices can work just as well. Sprinkling in some red pepper flakes, a pinch of parsley and a dash of salt and pepper can liven up your jarred pasta sauce.

Do you simmer with a lid on or off? ›

You can simmer with the cookware lid on or off, simply follow your recipe instructions. Keep in mind that when using a cover, you'll want to set your stovetop to a low setting as it can reach a simmer faster than without a cap.

What is the best thickener for spaghetti sauce? ›

Add Tomato Paste

Tomato paste is a highly concentrated tomato-based product that adds deep tomato flavors and naturally helps to thicken any pasta sauce, thanks to its paste-like consistency.

How to thicken spaghetti sauce without tomato paste or cornstarch? ›

Combine 2 tablespoons flour with every 1/4 cup cold water and whisk until smooth. Add the mixture to your sauce over medium heat, and continue to stir and cook until you've reached your desired consistency. Test with a spoon.

How do you make a thick sauce without cornstarch or flour? ›

Egg yolks, arrowroot, tomato paste or butter can thicken sauce in place of flour or cornstarch.

What spices to add to spaghetti sauce? ›

Red pepper flakes, dehydrated or fresh garlic, dried oregano, parsley, or basil, or an Italian seasoning blend are all good options. Dried herbs and spices should be added at the beginning of the cook time so that they have time to bloom.

How long do you simmer pasta sauce? ›

The minimum time you should simmer sauce is 30 minutes. This is about how long the oils take to disappear into the sauce (rather than pooling on top). But you should consider simmering for three or more hours, letting it lazily cook away, no more than a few straggling bubbles surfacing at a time.

What vegetables to put in spaghetti? ›

Vegetables — The type of veggies are up to you, but we love zucchini, yellow squash, jarred roasted red peppers, leafy greens, peas, corn, and cabbage. Options are endless, here. Onion, garlic, and tomato paste — These provide a base flavor for the simple sauce.
