Veg cutlet, vegetable cutlet is an excellent way to make kids eat the vegetables as snack. Step by step detailed pictures and quick video post.
An excellent way to make kids eat the vegetables as snack. Who doesn't love it. This can easily be tried at home even if you are a beginner in cooking. The key is to cook the potato and veggies without any water retention. Steaming or microwaving works best. At the same time, make sure to cook thoroughly.
You can make the pre-preparation and freeze/refrigerate too. Prepare everything as mentioned except frying part. Arrange in a tray and cling wrap. For freezing, once it is frozen, you can take out the tray and keep it in the ziploc cover. Take out and thaw before using.
So this is a nice idea to use this as birthday party recipe. While making in bulk, its better to deep fry,as pan frying will be time consuming.
Using a greased lid or shaper will help in uniform sized cutlets. Since this has all the veggies, you can happily feed your kids if they skip their veggie part any day. Or even while making simple lunch like one pot meals/ mixed rice varieties.

Ingredients
- 3 Potato
- ½ cup mixed veggies carrot, beans, cauliflower, peas
- 2 Bread slices
- ¾ teaspoon Garam masala
- 1 teaspoon red chilli powder
- 4 tablespoon Coriander leaves chopped
- ½ cup Bread crumbs
- 2 tablespoon All purpose flour
- Salt
- Oil For frying
Instructions
Pressure cook potato in a vessel and other chopped veggies together in another vessel for three whistles. Just sprinkle a teaspoon of water in the chopped veggies,that is enough. For potato just cut into 4 and add little water.Peel off the skin and mash the potato and add other veggies to it. Make sure there is no water.
Tear the bread pieces and crumble it by grinding in a mixer.This step can be skipped and you can directly add to the veggies as well. But I prefer this way for even mixing.
Add it to the veggies along with garam masala,red chilli,salt and coriander leaves and mix together.
Make a thick paste(like idly dosa batter consistency) out of maida and water. Make equal and desired shapes out of the veggies and set a side,I made it simple and round. Dip it in the maida paste one by one.
Quickly take it out and coat both sides with the bread crumbs. Repeat the process for the rest and arrange in plate.
If you are pan frying then just drizzle with some oil over a hot non stick pan and arrange 4 at a time and cook in a medium flame both sides,until crisp.

If in case the vegetable mixture is too sticky, add gram flour to make it stiff.
Make sure not to over cook the veggies, otherwise it will retain water and become gooey.
Adding cauliflower gives nice flavour to the cutlets. Adding beetroot give nice colour.
Deep frying gives a good look with even cooking of the outer layer.
You can add gram flour/kadalai maavu in place of the bread crumbs in the mixing part along with the veggies. But for coating dry bread crumbs are best.
You can make bread crumbs by sun drying bread for some time until it turns crisp and powder in a mixer. Also you can try micro waving the bread slices.

Vanisree, You can prepare until coating with bread crumbs(until step 7) and refrigerate it if using within a day or freeze it if you want ot use it later. but if you freeze it,once you thaw it, you should use it. You can freeze upto 15 days ...No specific preservatives needed

Dee cook, Microwave upto 4 bread pieces arranged in the micro wave tray can be micrawaved in high for 5-8 minutes,ensuring that you have to turn the bread pieces for each minute. Make sure you dont burn at any places,if its starts browning,just stop and give standing time(say 3-4 minutes) and you will get crispy bread slices,then you can break it and powder them in the mixer to get bread crumbs...

i tried the cutlet by deep frying, the outer crust was very crispy, but inside it was very soft, somewhat watery. i didnt use much water.

You can make and freeze the cutlets before frying and fry it when ever needed by defrosting it.

First dip and keep the cutlets in maida, then coat everything in the crumbs. Hope this helps. Also make the maida coating bit watery to avoid mess.

I guess problem in your case is the mixture gooey (water retained in your potato) Do not over cook potato. You can fry in kadai to make it stiff or add bread crumbs more to make it stiff.
