Olives have been a happy part of my childhood memories. When I was young, one of my sisters couldn’t say “olives”, but called them “labids” instead.Even as adults in our 30’s and 40’s, if one of us says “labids”, we know laugh and know exactly what each other means.

While we ate olives year-round, our largest consumption of “labids” happened at Thanksgiving and Christmas dinner each year. Our motherwould put together a relish tray with at leastthree items: “labids”, mini gherkins pickles, and celery sticks. The“labids” were always first to go.

But while we enjoyed eating the olives, my favorite olive memory is theprocess of putting them on our fingertips before weate them…one by one. Yeah, it was definitely considered playing your food,but this was the raretime we wouldget a free pass. I suspect my parents enjoyed seeing us with olive fingers just as much as we enjoyed wearing them.

With my own family, olives have remained a staple at our house. My kids know what“labids” are and they’ve also displayed their own olive fingers with pride. And olives regularly make an appearance at dinner time. One of our favorite dinners that features olives is Hummus Pita Pizzas– a super easy dinner that requires minimal cooking.

When I was needing to come up with an easy dip idea to bring to a get-together, I thought of our easy Hummus Pita Pizzas dinner and thought how great it would be to transform that into an easy dip.

This is when the 5-Minute Layered Hummus Dip was born!

Mezzetta products are a favorite in our house, so I boughtMezzetta Kalamata Olives for one of the layers. I love that they are a family-owned companyand everything I’ve tried that they have made has been of thehighest quality.

You’re going to love how easy this dip is. Simply take a pie plate or a small baking dish and spread prepared hummus in the bottom. Then, top the hummus with delicious layers: feta cheese, grape tomatoes, sliced Mezzetta Kalamata olives, followed by a sprinkle of fresh dill (this is a MUST for me) and Italian parsley.

Serve it with crisp pita chips, tortilla chips, or your favorite cracker.

I’m going to tell you – your guests will think you’re a genius. And they seriously won’t believe that it only took you 5 minutes to make this. Hummus tends to be a go-to snack for our parties, but this make it even more special.

Ingredients

  • 17 ounces hummus
  • 1/4 cup to 1/3 crumbled feta cheese
  • 12 pitted Mezzetta Kalamata Olives (halved)
  • 10 grape tomatoes (quartered)
  • Fresh Italian parsley (chopped)
  • Fresh dill

Instructions

  1. Spread hummus evenly in the bottom of a pie plate or small baking dish. Sprinkle feta on top of hummus. Top with olives and tomatoes. Sprinkle parsley and dill. Serve with crisp pita chips, tortilla chips, or crackers.
